As a member of the distinguished KitchenAid family, the Classic Plus has the hereditary body type with the motor in the tilt-head perched above the bowl and the broad base. This model comes with the traditional flat beater, dough hook, and wire whip that can work at ten different speeds. Ease of Use

Compared to other stand mixers, the Classic Plus fairs well in this metric. The interface is simplistic — in a good way — facilitating single-handed operation and bowl insertion/removal. The machine is stable, even when mixing at a high speed. We also appreciate that when mixing or beating, the user is infrequently required to use a spatula to scrape the bowl for unincorporated ingredients. The machine is easy to clean, partly because the body and bowl are easy to wipe down, and since spilling is limited in the first place. The Classic's motor has a slow start-up speed regardless of setting, so dry ingredients don't get thrown. The tilt-head can be tilted back to access the bowl without dumping the ingredients onto the head. All and all, this model is a pleasure to use.

Mixing

Mixing is arguably the most common task of stand mixers for in-home kitchens. We extensively test these products for this application, and the results make up a whopping 30% of each product's overall score. Our tests are the mixing portions of common recipes. However, each recipe isolates specific kinds of mixing tasks and desired outcomes.

Planetary mixing action and a narrow bowl/attachment gap equals even incorporation of ingredients and infrequent involvement from the user.

To be specific, we use a prodigiously packed cowboy cookie recipe. These cookies challenge the motor and beater paddle to uniformly mix the chocolate chips, nuts, oats, and coconut flakes into a supple dough without masticating them in the process. We also utilize the first few steps in a pizza dough recipe to test the machines' ability to incorporate wet and dry ingredients with the dough hook for an attachment. Lastly, we make a classic buttercream frosting to test the mixers' ability to keep ingredients in the bottom of the bowl instead of smeared all over the sides of the bowl. As with the pizza dough recipe, we look for a smooth, even consolidation that doesn't present any clumping or dry spots.

While making these recipes, we closely watch the mixers' reactions to the work, asking ourselves questions: Does the task cause them to labor? Do their motors whine? Is the rotation of the mixing attachment even? The Classic Plus lives up to the KitchenAid standard of excellence with a few hiccups in the frosting and pizza tests that required the tester to bring the spatula into play briefly. In all other recipes, it was at the top of the class, proving that these machines can reduce the work while at the same time producing high-quality results.

Whipping

For some mixer tasks, having a powerful motor with high RPMs on its own isn't enough to get the job done. Whipping, which accounts for 25% of a product's overall score, is one of these tasks. Whipping is simply the aeration of a medium such as egg whites. Like so many simple culinary tasks, whipping is easy to overdo.

The challenge lies in working the egg whites enough that a matrix of air-filled bubbles develops but not working them too aggressively such that the bubbles are broken apart. We test for this directly by measuring the volume increase in whipped cream and baking a sponge cake that uses whipped egg whites as a leavening. The height of the rise and sagging at the center of the sponge are good indicators of the whipping quality.

The Classic struggled with both of these tasks. To put it bluntly, it is among the poorest performers in the class. The sponge failed to rise to an inch and a half — the mode for the group — and it sagged considerably in the center. While this outcome could be attributed to a number of other variables, the fact that we barely doubled the cream volume in the whipped cream test supports this assessment.

Kneading

Kneading produces an elastic structure in doughs that make them substantially better at retaining CO2. This outcome is critical as gas caught in the dough causes it to rise, and these voids produce light, airy bread. Kneading is an excellent task to hand off to a mixer as it's mechanical, time-consuming, and physically demanding while not being particularly technical.

To test the Classic Plus kneading effectiveness, we used a basic pizza dough recipe and mixed it with the standard dough hook that comes with the machine. The process was straightforward and effective, although it required a bit of assistance with a spatula. The result was a thoroughly mixed dough that was springy and elastic. Upon consuming the baked pizza, all agreed that the crust exterior was delicate and crisp, while the crumb was light and open. Yum!

Should You Buy the KitchenAid Classic Plus KSM75WH?

The KitchenAid Classic Plus is an affordable kitchen appliance for those on a budget. This mixer performs at the highest level in the mixing, ease of use, and kneading test metrics. If it weren't for its mediocre showing in the whipping metric, it would be an all-around leader in the class. That said, this machine is considerably less expensive than some of the competition yet outperforms the majority of the class.

What Other Stand Mixers Should You Consider?

Indeed, stand mixers can be a big investment. However, we think it is worth spending the money to get one that can adequately perform the tasks you have in mind, like the award-winning KitchenAid Artisan Stand Mixer. Typically, an increase in cost coincides with an increase in performance. The Bosch MUM4405 is an exception to that rule as it offers above average performance while not draining your bank account.

You don’t get many convenience features with this electric mixer because it is a basic machine. As such, it lacks helpful extras like a splashguard and handle on the bowl. If you want these extras and others, such as a somewhat larger bowl and a large selection of colors, take a look at the KitchenAid Artisan mixer .

The KitchenAid Classic Plus stand mixer can start slowly if you’re able to get the lever to only move one spot. We found that the lever can stick sometimes, jumping to the second position and sending dry ingredients flying – so we wore flour during a few of our tests. This is one of the many advantages of a splashguad, which can always be bought in addition to the KitchenAid as it isn't included in this model. A common mistake when cooking with a KitchenAid is confusing the lever-head with the speed setting lever, so be careful when starting out. 

As with the best stand mixers, the KitchenAid Classic gives you a locking tilt head so there is easy access to the bowl’s contents and the attachment port. One thing you will need to do is keep an eye on your mixer if you push it to its limit because it doesn’t have overload protection, and you risk burning out the motor. This should only be a concern if you run the mixer at maximum speed for extended amounts of time with a bowl of heavy ingredients.

You get the basic attachments you’d expect with a mixer like this, including the paddle, whisk and dough hook. The bread dough ingredients we prepared with the KitchenAid Classic Plus dough hook went in sticky and barely incorporated. However, with just 10 minutes of kneading, the dough was smooth and elastic, which is precisely the texture you need to make great homemade bread.

When we put this mixer to our cookie dough test, the butter and sugar mixture we creamed together was smooth, though some of the butter remained on the side of the bowl. This mixer manages to combine ingredients gently but thoroughly – the chocolate chips we added at the end were equally distributed and not broken.

During our testing with whipped egg whites, this KitchenAid ensured that the egg whites were fluffed up in record time – it produced plenty of volume and the peaks were stiff, although there was a tiny bit of liquid left at the bottom of the bowl.

Should you buy the KitchenAid Classic Plus stand mixer?

Although the one-year warranty from KitchenAid is rather short, if the mixer is defective you get a replacement at the company’s cost. Customer support is available from the mixer maker via phone, email and live chat on the manufacturer’s website.

The KitchenAid Classic Plus is a basic mixer with excellent performance and good versatility, which you can expand by purchasing extra KitchenAid attachments. The 4.5-quart bowl is a tad smaller than the KitchenAid Artisan’s 5-quart bowl, and this is missing some extras that come with other mixers like a splashguard, but the Classic Plus does well for a basic mixer.

Among other things, we will consider the prospects and justification for such a purchase, while for measurements we will take a professional “line”, that is, we will become more strict and biased judges.

Company history.

The history of KitchenAid began in 1908. It was then that Ohio engineer Herbert Johnston began to work on the creation of a mixer. One day, he watched a baker diligently kneading bread dough by hand and decided to design a mixer to make this grueling job easier. According to legend, the wife of the CEO of the company that produced the mixer, having tested it in practice, said: "It's the best kitchen aid" - "This is the best helper in the kitchen." This is how the brand name came about. And at 19'55 at the annual Housewives Show in Atlantic City, KitchenAid is showing a new line of colorful mixers. My surprise started with the packaging. Remembering what a beautiful box the hand mixer had, I expected nothing less from a large stand mixer. The courier brought me a large box of industrial cardboard - you know, such craft cardboard of the usual brown-beige color. I will say more about this below, KitchenAid offers more than 20 colors of this mixer, and not far in America, but also here in Russia. The next pleasant moment is the “5 year warranty” mark. FIVE YEARS! If you know a little about household appliances, then you know that not all manufacturers are ready to give such guarantees for the most indestructible kitchen appliances - refrigerators. And we are talking about a mixer that is used in a more aggressive mode. But such boldly Kitchen Aid is justified. The mixer itself is included as standard.

I don't know of another example in home appliances where a company was able to create such a recognizable product with a timeless design that, years later, it was as enthusiastic as it was at the beginning.

I could not find a single extra line, detail or element that seemed foreign or non-functional to me.

The entire body of the mixer is pure metal. That's one of the reasons why Kitchen Aid is so bold about offering a five-year warranty. The mixer stands securely on the table due to its weight, it is very convenient.

As I said, Kitchen Aid offers more than 20 body colors available in Russia, there are glossy and matte finishes with romantic names like Raspberry Ice. This is not counting limited editions with patterns, inscriptions and so on. Professional tech doesn't have to be boring, right?

I have a mixer in the color Candy Apple, it is more interesting and voluminous than Red. The surface of the case is not smooth, this will protect it from minor scratches.

Attention to detail

You already know how much I love to look at details, attention to them betrays a conscientious manufacturer, whom you unconditionally trust in everything.

Again - everything in the mixer is made of metal - body, internal parts, attachments, bowl and other accessories supplied separately. This is reliability and durability and confidence. Look at the bowl base:

Strong fastening keeps the bowl in a fixed state, and in fact the speeds and loads are sometimes considerable. What I liked is that nothing dangles. And the mixer itself, and the bowl, and nozzles - there are no extraneous backlashes, overtones and unpleasant vibrations. Here the engineers, of course, tried.

There is a beautiful metal nameplate on the front of the mixer (the company has been generous with the use of materials). It hides a functional hole that allows you to expand the possibilities of the mixer to an infinite number of options.

All switches are strict, convenient and located quite reasonably - always at hand, but it is unlikely that you will be able to accidentally switch something.

The cooling system is moved as far as possible from splashes and dust (for example, from flour), to the rear face. There is also a power wire. This is very wise.

Since this is still a high-vibration appliance, Kitchen Aid engineers have provided for the possibility of adjustment. This small screw here will help adjust the position of the whisk in the bowl so that the attachments do not scratch the bowl.

There is a hole behind the nameplate, into which additional accessories are inserted to expand the functionality of the mixer. Note that there are no areas or openings in the mixer that are not protected from dust and moisture. Everything that is not currently in use is closed.

Both control levers have comfortable finger grooves, I took a piece of butter in my hands, and then tried to switch the speed mode - the lever does not slip and obediently performs switching.

The mixer has rubber feet, very wide. We can safely say that he will stand confidently; I don’t like it when such devices “travel” around the table if they are accidentally touched or pulled by the wire (again, by accident).

Of course, we usually start the choice of mixers with power. The Kitchen Aid Planetary Mixer delivers 300W of continuous power. Not enough, you say, because others claim both 500 and 1000 watts. Everything is not so simple, it turns out that almost all manufacturers of household appliances indicate "advertising power", that is, peak power. In other words, the mixer will be able to produce the declared 700 watts for a fraction of a second, and then the decline will follow. It looks something like this:

In turn, Kitchen Aid indicates a constant power of 300 watts - this means that it will be able to work for 10 minutes with a constant power equal to 1600 watts of the “advertising” power of other mixers (remember, it lasts a fraction of a second). Power and materials sorted out. Let's move on - exploitation. Everything is very simple here: combine the ingredients in a bowl and beat with the selected nozzle. Here's how the process looks like - tilt the top of the mixer back, install the desired nozzle, fix the bowl in place, lay out the ingredients and close the top of the mixer to its original position. And then 10 speeds at your service.


Here is the whipping process a little closer. Look at how the mechanism works - the nozzle rotates around its axis and in orbit, due to which, a larger coverage of the area is obtained. At the same time, there are no unaffected areas, which is necessary when whipping oil-based creams and thick mixtures - it is often impossible to collect the mass from the walls of the bowl with a hand mixer, the beaters simply do not fit the bowl in shape.

At the same time, the lock prevents the upper part of the mixer from opening uncontrollably, the motor with the nozzle is firmly fixed, there will be no surprises.

Gear changes are very smooth and comfortable, as you can see in the video above. Subjectively, it seems that from ordinary mixers I could get a speed of 7-8, that is, there is a margin of 2-3 speeds - this is very cool, especially when making meringue, whipping cream, and so on.

Do you know what other indisputable plus these mixers have? Free hands! Yes, now I can not only operate with ingredients within a part of the desktop, I can generally walk from room to room (anything may be needed) while the dough is being whipped. Here is an example - we are preparing a berry pie. We throw in the ingredients of the future dough and calmly clean the berries, cut and so on, at this time the dough will knead itself. Saving time? Yes! Energy savings? Undoubtedly.

You can also easily make complex types of dough - this is when the ingredients are added one by one. There are recipes where you need to mix butter with sugar, add 6 eggs in turn, then flour, cocoa, something else. Imagine how much more convenient it is to do this without turning off the mixer every time. I think it saves half the time.

Whipping egg whites and creams is a real pleasure.


The same applies to dough, especially yeast dough - where it is generally recommended to knead for 10 and 15 minutes, it is very difficult for a fragile girl to do it manually. And here you don’t need to do anything, put the hook attachment, put the ingredients and turn on the average speed. I will have pizza almost every day now, considering how easy it is to make the dough.

Steel bowl, optional glass bowl. These materials are low-porous - they do not absorb odors and food particles, and they also quickly cool and heat up - this is useful for whipping cream, proteins and for a water bath, although here the mixer is inferior to manual counterparts.

Expanding the functionality

But the Kitchen Aid mixer would not have become a legend if the company's engineers had limited themselves to the standard functionality. We are lucky, today the mixer has more than a dozen additional elements that add new features. These are meat grinders, juicers, ice cream makers, modules for rolling dough for pasta, ravioli and more.
