Useful properties of Brussels sprouts

Heads contain up to 17.5% dry matter, up to 5.5% protein, about 6% sugars, 1.2-1.7% fiber. The beneficial properties of the vegetable are also caused by the presence of vitamins C, PP, B1, B5, B6, B9, potassium, magnesium, sodium, calcium, iron and iodine salts.
