Years ago (before our first air fryer cookbook was even a twinkle in our eye), we were definitely wary of another kitchen gadget. Our kitchens are full enough as it is (with slow cookers, waffle irons, stand mixers…), so anything new has to be great. Turns out, the air fryer is TOTALLY worth it. Our top reasons why: We love deep-fried foods (who doesn’t?!), but we are not about all the oil, mess, and cleanup involved. The air fryer solves all of that, in less than half the time. It turns out the crispiest, crunchiest foods with juiciness still locked in, thanks to hot air convection cooking. What’s really wild is how often we use ours. It’s become our go-to for everything from breakfast to dessert, and has even edged out our toaster as our on-counter appliance of choice. It’s just as good at helping you make delicious lunches and dinners too. Best Air Fryer Granola Recipe

What can't the air fryer do? For starters, it can turn out fluffy oat pancakes and make a crispy chicken sandwich with a fraction of the oil you'd normally use. It can bake up perfect peanut butter-and-chocolate cookies and perhaps best of all, it makes crunchiest of crunchy granola. That's because an air fryer works by circulating extra high-powered hot air around whatever it cooks, which is exactly what's required to create granola with a crispy, not soggy, texture. That's the case in this batch of Cinnamon Crunch Granola, which is chock-full of pecans, pumpkin seeds, and coconut. Of course, if you'd rather other mix-ins, you can play around with whatever nuts and seeds you have on hand as long as the dry ingredients add up to 3 1/4 cups total.

P.S. If you're feeling truly inspired, why not fire up your instant pot for a batch of homemade yogurt, too?

  • 1/3 c.

    packed light brown sugar

  • 1/4 c.

    extra-virgin olive oil 

  • 1 tbsp.

    ground cinnamon

  • 2 tsp.

    pure vanilla extract

  • 1/4 tsp.

    kosher salt

  • 1 1/2 c.

    old-fashioned rolled oats

  • 1/2 c.

    raw pecans, roughly chopped

  • 1/2 c.

    raw pumpkin seeds (pepitas)

  • 1/2 c.

    unsweetened coconut flakes

  • 1/4 c.

    raw sunflower seeds

  • Fresh berries and yogurt, for serving (optional)

Directions

    1. Step 1 In a large bowl, combine brown sugar, oil, cinnamon, vanilla, and salt. Add oats, pecans, pumpkin seeds, coconut, and sunflower seeds and toss to combine.
    2. Step 2Line an air-fryer basket with foil, coming 1" up the sides to create a foil basket. Add one-third to one-half of oat mixture (depending on size of air fryer). Cook at 350°, stirring halfway through, until golden and crispy, 6 to 9 minutes.
    3. Step 3Transfer to a large heatproof bowl and let cool. Repeat with remaining oat mixture.
    4. Step 4Serve with berries and yogurt, if desired.
    5. Step 5Make Ahead: Granola can be made 1 month ahead. Store in an airtight container at room temperature.
