2Heat the oil in a heavy saucepan and brown the meat on both sides (6 minutes). Put with tongs on a plate.

3Drain almost all the fat from the pan (reserve about 1 tablespoon) and, reducing the heat, sauté the finely chopped onion for 3-4 minutes. Add vinegar to the onion and, stirring, wait until the liquid evaporates (about 3 seconds).
