The following are considered premium:
* Tender Loin (filet mignon, tenderloin, chateaubriand) - the most expensive cut, taken from the hypochondrium in the form of a tapering "tail". Fine-grained tender meat with a creamy flavor, which is usually cut into thicker pieces. It is better to fry in a pan until crusty, then bring to readiness in the oven.
* Strip Loin (New York, Kansas Steak) - a thin edge that is taken just past the ribs, near the spine, with a strip of fat along one edge. Not the most tender, but very juicy meat with a pronounced taste and aroma. When frying, you can put it on the edge with fat to melt it, otherwise it is prepared as usual. nine0005
* Rib eye (entrecote, Scottish fillet) - taken from the upper part of the sternum, after the fifth rib; May be served with or without bone. The most marble of the pieces is due to the large amount of fat (there are fat pockets). It has the brightest and richest taste and juiciness. The cooking process is standard.

Step 2: Properly Roasted
The second most important factor for achieving a perfect result is the correct preparation process. Although technically there is nothing complicated here - just fry for several minutes at maximum heat - in fact there are a lot of nuances.
So, there are 3 main degrees of roasting:
1 - Rare (meat temperature - 52-55C)

Each degree also differs in the bakedness and the amount of juice inside. But how to determine the exact temperature? The easiest way is to get a kitchen thermometer with a needle. However, it is not recommended to pierce the meat during the cooking process: this way you will lose the precious juice, and the whole point of the process is precisely to seal it inside. For the same reason, do not use a fork or knife to sample. An alternative way is this: we connect the thumb in turn and touch its base with the index finger of the other hand, comparing it with the softness of the meat. Step # 3: we observe all the subtleties
First, take the steak out of the refrigerator, rinse it dry with a towel and leave it at room temperature for about an hour. A minute before cooking, rub with coarse salt and pepper (you can add rosemary, thyme or other herbs to taste), massaging and lightly slapping. Heat a frying pan or grill to the highest temperature. Next, using a brush, grease with olive oil of your choice - either the piece itself (this will seal the aromas better), or the pan (this way the oil warms up better before frying). Depending on the desired doneness and the thickness of the piece, cook for 2 to 4 minutes (or more), turning every minute. If you have a New York steak, put it on the butt to melt the fat.
