Alsatian cuisine perfectly combines the abundance and rustic simplicity of German cuisine with French sophistication and sophistication.

According to my observations, Alsatian cuisine is the most favorite among Russians coming to France. In it they find familiar smells and aromas. They enjoy "ours-like" sausages, frankfurters, onion pies and smoked brisket. With pleasure they eat dishes with sauerkraut or smoked lard, washed down with fine light local wine or beer.

And the mood in this region is especially cheerful, simple, and relaxed. Some "winstubs" (winstub) are worth something! In these typically Alsatian bodegas, people sit on benches at long wooden tables. Food is served on the table in large platters, and everyone puts as much as they want on the plate - "like at home." Alsatian Pizza ( Flammekueche )

Charming little restaurants dotted throughout Alsace serve this delicious and simple dish. It's just something like an Alsatian pizza. However, the dough in this flatbread is thin and crispy. And they serve it unusually: they bring a large cake to the table, cut it into as many pieces as there are people at the table, and everyone gets a piece. A few minutes later, a second cake is brought to the table and again divided among all. And so several times, so that the flammekueche never cools in the plate. Of course, in order for flammekueche to become unforgettable, you need to get into a good restaurant. Or... cook this dish at home. Suddenly, it will turn out just as tasty ...

For 2 flammekueche
2 servings of yeast dough (for bread)

300 g cottage cheese

150 g sour cream

200 g smoked brisket

2 tbsp 9002 9002 tablespoons vegetable oil

Cut the brisket into cubes and brown in a frying pan.

Peel, finely chop and brown the onion in vegetable oil.

Mix sour cream, cottage cheese and fried onions in a salad bowl.

Roll out the dough as thin as possible. Arrange the minced meat on top, sprinkle with the brisket and bake for 5-7 minutes in a preheated oven (240°C). Meanwhile, prepare the second cake. As soon as the first one is baked, serve it on the table, and put the second one in its place. nine0003

Rösti made from potatoes and celery root (or cabbage)

Rösti are similar to our potato pancakes, only the potatoes are grated much larger. And, oddly enough, with such rubbing, the taste of potatoes is completely different. Celery is not included in classic rosti. This is a variant of "new Alsatian cuisine ". But even with the most ordinary fried eggs, both variants of röshti are just delicious.

1 kg potatoes

1 large celery root

3 pinches nutmeg

10 tbsp. tablespoons vegetable oil, odorless

50 g butter

salt, pepper

Peel and grate potatoes and celery on a coarse grater. Squeeze out the water (never wash!) Transfer to a salad bowl, salt, pepper and add nutmeg.

Heat vegetable oil in a frying pan, add a few spoonfuls of minced potato and spread with a spatula all over the frying pan. Fry for 10 minutes over medium heat. Then tilt the pan over a large flat plate, push the pancake onto it, cover it with another plate, turn it over and push it into the pan so that the second side is fried. First put a piece of oil in the pan. Fry for another 10 minutes.

Put the finished pancakes on a plate and place in a warm oven to serve hot and crispy.

Chips for Smoked Brisket Aperitif

Remove the skin from the brisket and cut into slices as thin as possible.

Line a baking sheet with waxed paper, grease it with a thin layer of vegetable oil and spread the brisket in one layer. Cover with wax paper on top and place in a warm oven (30-40 °) for 1 hour, without closing the oven door. nine0003

Serve as soon as the chips are appetizingly crispy.

Baeckeoffe with potatoes

It is important to marinate the meat 10 hours before cooking.

Serve, of course, with Alsatian white wine. Be careful - it is drunk like water, but then it is unexpectedly difficult to get up! So, I advise you not to exceed the dose.

For 8 people:

400 g pork

400 g smoked brisket

3 onions

1 kg of potatoes

½ liter of meat broth (from cube)

1 liter of white dry wine

1 Garlic tick

½ teaspoon of thyme

1 bay

7 g of butter

10 st. tablespoons of flour

salt, pepper

Cut the meat into even, not very thin pieces. Peel and chop (not very finely) the onion.

Put the meat and half of the onion in a large salad bowl, add the thyme, bay leaf, salt and pepper, stir and pour over the wine. Cover the bowl with foil and refrigerate for 10 hours. nine0003

After this time, wash, peel and slice the potatoes. Rub the garlic and then the oil on the sides of a deep earthenware dish. Put a thick layer of potatoes on the bottom, the remaining raw onion, salt, pepper, add the meat strained from the marinade. Cover with the remaining potatoes, season lightly with salt and pepper. Pour marinade, broth and crumble the remaining oil.

Mix the flour with water to make a soft dough and glue the lid to the pan with it. Put in a preheated oven (210-240°) for 1.5-2 hours. nine0003

After this time, remove the dishes, break the dough and serve in a saucepan on the table.
