Initial observations

The Ninja Air Fryer Max XL has a slimmer footprint than most mid-size air fryers we tested. The basket pulls out easily and is fairly deep: The diameter is roughly nine inches, and it can hold about 10 chicken wings in a single layer. The tray is removable, which we found easier to clean than removable air fryer baskets that sit inside a drawer. (When testing fries, we noticed that the tray did not fall out of the basket when we turned it upside down, which helps make the cooking and serving process easier.)

The control panel is easy to read and operate. It offers several built-in settings — Max Crisp, Air Fry, Air Roast, Bake, Reheat and Dehydrate — which differ in their minimum and maximum temperature and time ranges. For example, Max Crisp is set to 450˚F and ranges from one minute to 10 minutes, Bake can be set between 250˚F to 400˚F and ranges from one minute to four hours and Dehydrate can be set from 105˚F to 195˚F and ranges from one hour to 12 hours.

Test results

When evaluating air fryers in our Lab, we test chicken wings, frozen French fries and homemade French fries. We assess cook time, how evenly foods are cooked and whether they're crisp and juicy. We found that the Ninja Air Fryer Max XL cooks both wings and fries quickly and evenly without drying them out.

Good Housekeeping

Plain chicken wings, simply seasoned with kosher salt, got crispy and bubbly in 20 minutes and became a nice golden brown, perfect for eating on their own or tossing in sauce.

Good Housekeeping

Frozen French fries cooked almost perfectly even in the Ninja Air Fryer Max XL. We air fried them at 350˚F for 20 minutes as suggested by the cooking chart in the user guide. They were crispy and moist on the inside, though they might have benefited from a few minutes less. The user guide suggested frequently checking on the food and shaking as necessary, but we chose not to disrupt the cooking process to help us better assess how evenly the air fryer cooked.

In addition to testing frozen fries on the Air Fry function, we tested them on the suggested Max Crisp setting to evaluate the difference. After just 10 1/2 minutes, the fries were cooked but also burnt in places. This did not make us think the air fryer was bad; it merely indicated that this setting is powerful. Going forward, we know to check foods often when using Max Crisp, which is designed to make food extra crispy, especially during the last few minutes of cooking.

We also air fried fresh, hand-cut French fries that were tossed with olive oil and kosher salt and cooked at 350˚F for 20 minutes. They turned out mostly even and crispy on the outside but still soft and moist inside. We also did not shake these fries during cooking, but we noted that we probably should have since the oil caused them to stick and not fully brown.

Additional tests

Over the years, we've used the Ninja Air Fryer Max XL to cook all types of veggies as well as proteins from salmon to pork chops to meatballs. One-inch wide salmon fillets cook to tender and juicy medium-well with crispy skin in about seven minutes on 400˚F, while a bone-in pork chop takes about 10 minutes to be fully opaque and golden on both sides.

The Ninja Air Fryer Max XL's basket size is average but seems smaller than some other air fryers of similar size, particularly those with square air fryer baskets. It cooks quickly and efficiently and is easy to use.

The main differences between the Ninja Air Fryer Max XL and the Ninja Foodi Air Fry Oven are size and cooking capabilities. The Ninja Air Fryer Max XL is mainly an air fryer, while the Ninja Foodi Air Fry Oven resembles a toaster oven and can also toast bread and bake foods, thanks to extra elements on the bottom of the unit. The Air Fry Oven also has a much larger surface area so you can cook more foods that benefit from being cooked in a single layer, like wings and other proteins, at once.

Should you buy the Ninja Air Fryer Max XL?

If you're looking for a good, basic air fryer, the Ninja Air Fryer Max XL is an excellent choice. It's easy to use, delivers great results and, thanks to its ceramic-coated basket, is dishwasher safe for simple cleanup. We also appreciate its small footprint, which helps save counter space.

If you're cooking for four or more people at a time, you may want to consider the 8-qt Ninja Foodi 6-in-1 2-Basket Air Fryer with Dual Zone Technology. Its larger footprint requires more space, but it offers more overall surface area while still allowing for smaller batches and less bulky cleanup. In our tests, it worked just as well as the Max XL but was a little trickier to program because it features more buttons. It even comes in a 10-qt option, though we haven't tested this model yet.

If you're looking for an air fryer that you can also use to toast bread and bake goodies, consider the Ninja Foodi Digital Air Fry Oven. It offers a slim design and a lot of cooking surface in a single layer; plus it stands up for storage. It air fried well in our tests and produced evenly toasted bread; however, it can't fit a whole chicken or roast like some other air fryer toaster ovens. The Ninja Foodi 10-in-1 XL Pro Air Fryer Oven offers the most cooking area, with four rack positions and a large assortment of trays so you can cook on at least two levels at once. We tested the Smart version, which includes a built-in thermometer. It took a little longer to air fry wings than the Max XL, likely because of its larger capacity, and it got a little smoky when we didn't use the roasting rack, but we liked that it was easy to operate — even with its advanced controls — and that we were able to cook a whole chicken in it.

Counter space is prime real estate, and this was one of the most versatile basket-style ovens I tested. The Ninja can perform multiple tasks in one convenient and easy-to-use machine. With a base that’s 14 inches wide and 11 inches deep, it takes up less space than many of the other models I tested, yet still has the capacity to hold up to 3 pounds of fries or chicken wings. It has seven presets—bake, reheat, dehydrate, air broil, air roast, air fry, and max crisp—that make it easy to achieve precise cooking results. How Does The Ninja Air Fryer Max XL Compare To Other Air Fryers?

This air fryer took the top spot in our test because it’s fast, functional, and easy-to-use. It produced perfectly golden french fries, crispy and tender chicken wings, and moist and chewy chocolate chips with ease. The streamlined functionality is easy to understand and use, and the nonstick coating makes it easy to clean. Though it performed similarly to the Instant Vortex 6-quart Air Fryer, it can reach a higher temperature, which means it’s even more effective at achieving crispy results—like browned chicken skin or crunchy potatoes. How I Tested The Best Air Fryers

To see how the Ninja compared to other air fryers in my tests, I first examined its design to consider how easy it would be to store and clean. I considered size, and looked at how it fit on my countertops and in my cabinets. I also checked the material on the inner basket, which is coated with nonstick ceramic to prevent foods from sticking.

To determine functionality and versatility, I ran the Ninja through three culinary tests. First, I fried dry french fries with just a bit of cooking spray to determine how quickly the oven heated up and how evenly it distributed heat. I examined the color of the cooked fries, and evaluated how golden and crispy they were after cooking. Next, I fried chicken wings to see how the oven handled dripping grease and chicken juices. I examined both the color and texture of the skin as well as the texture of the meat. I made sure that the chicken was juicy and perfectly cooked through, and I also noted if any of the meat stuck to the inside of the oven. Lastly, I baked chocolate chip cookies and examined how crispy or moist they came out to test the baking capabilities of this fryer.

After the cooking tests were complete, I cleaned the oven according to the brand’s instructions and observed how easy or challenging it was to clean. Throughout the process, I made note of how convenient the product is and how straightforward the controls are.

OPERATION BUTTONS

TEMP arrows: Use the up and down arrows to adjust the cooking temperature before or during cooking.

Hold mode: In SMART FINISH mode, the block will display Hold. One zone will cook while the other zone will keep until the time is synchronized.

BEFORE USE FOR THE FIRST TIME
  1. Remove and discard all packaging material, advertising labels, and tape from the device.
  2. Remove all accessories from the packaging and read this manual carefully. Pay particular attention to operating instructions, warnings, and important precautions to avoid personal injury or property damage.
  3. Wash baskets and plates for a crisper crust in hot soapy water, then rinse and dry thoroughly. Fresher plates and baskets are the ONLY dishwasher safe part. NEVER wash the main unit in the dishwasher.

REFERENCE GUIDE TO RECIPES AND COOKING TABLES

COOKING WITH DUAL ZONE™ TECHNOLOGY The uses two burners for increased versatility. The Smart Finish feature ensures that, regardless of different cooking settings, both zones are ready to serve at the same time. See pages 10-13 for detailed instructions on how to use each feature.
SMART FINISHING
To finish cooking at the same time when foods have different cooking times, temperatures or even functions:

  1. Place the ingredients in the baskets, then insert the baskets into the appliance.
  2. Zone 1 will remain lit. Use the dial to select the desired cooking function. Use the TEMP arrows to set the temperature and the TIME arrows to set the time.
  3. Select Zone 2, then use the dial to select the desired cooking function (Air Broil can only be used in one zone when using Smart Finish). Use the TEMP arrows to set the temperature and the TIME arrows to set the time. NOTE: Air Broil can only be used in one zone.
    NOTE: You can select a different function for Zone 2.
  4. Press SMART FINISH, then press the center of the dial to start cooking in the zone for a long time. The other zone will display Hold. The device will beep and activate the second zone when the same time remains in both zones. NOTE: It is recommended to shake the food during cooking. To synchronize time, press the center of the dial to pause both zones. To pause one zone while cooking in two zones, see page 8.
  5. When cooking is complete, the appliance will beep and the display will show “End”.
  6. Remove ingredients by dumping or using tongs / utensils with a silicone tip. DO NOT place the drawer on top of the device.
    NOTE: If you decide that food in one of the zones is cooking before the cooking time has elapsed, you can STOP THE ZONE. Select this zone, then press the center of the dial to pause the zone or set the time to zero. See page 11 for further instructions.

MATCH COOK

To cook more of the same food or cook different foods using the same function, temperature and time:

  1. Place the ingredients in the baskets, then insert the baskets into the appliance.
  2. Zone 1 will remain lit. Use the dial to select the desired cooking function (Air Broil cannot be used in any of the zones when using Match Cook). Use the TEMP arrows to set the temperature and the TIME arrows to set the time.
  3. Press the MATCH COOK button to copy the settings from Zone 1 to Zone 2. Then press the center dial button to start cooking in both zones. NOTE: Air Broil cannot be used in Match Cook mode.
    NOTE: It is recommended to shake the food during cooking. To synchronize time, press the center of the dial to pause both zones. To pause one zone while cooking two zones, see p. 8.
  4. "End" will appear on both screens when cooking ends at the same time.
  5. Remove ingredients by dumping or using tongs / utensils with a silicone tip.

DOUBLE ZONE COOKING

If Smart Finish or Match Cook is not selected, a technology is built into the design that automatically optimizes power distribution when using two zones with different cooking times. This means that food in a zone with a longer cooking time may run out before the set time has elapsed. Check foods often to prevent overcooking.

  1. Select Zone 1, then use the dial to select the desired cooking function. Use the TEMP arrows to set the temperature.
  2. Use the TIME arrows to set the time.
  3. Repeat steps 2 and 3 for Zone 2.
  4. Press the center of the disc to start cooking in both zones.
  5. When cooking is completed in a zone with a shorter cooking time, the power will change to help optimize the cooking time in the remaining zone.
  6. Keep an eye on the food as it may run out before the set cooking time.
  7. Remove ingredients by dumping or using tongs / utensils with a silicone tip.

  1. To pause time in SMART FINISH mode or pause both zones in dual zone cooking mode, press the center of the dial.

HINTS AND TIPS
  1. For even browning, make sure the ingredients are placed evenly on the bottom of the basket and do not overlap. If the ingredients overlap, be sure to shake them halfway through cooking.
  2. The temperature and cooking time can be adjusted at any time during cooking. Simply select the zone you wish to set, then press the TEMP arrows to set the temperature or the TIME arrows to set the time.
  3. To convert recipes from a traditional oven, reduce the temperature by 25°F. Check food often to prevent overcooking.
  4. Fryer fan sometimes blows light food. To avoid this, secure foods (such as the top piece of bread on a sandwich) with wooden toothpicks.
  5. Clearer plates lift ingredients in baskets so air can circulate under and around ingredients for uniform and crisp results.
  6. After selecting a cooking function, you can press the center of the disc to start cooking immediately. The device will work with the default temperature and time.

  • How do I adjust the temperature or time when using a single zone?
    When one zone is running, the time or temperature can be adjusted at any time by pressing the up/down arrows.
  • How do I adjust the temperature or time when using both zones?
    Select the desired zone, then use the TEMP arrows to adjust the temperature or the TIME arrows to adjust the time.
  • Can I cook different foods in each zone and not worry about cross contamination?
    Yes, both zones are independent with separate heating elements and fans.
  • How do I pause or stop one zone when using both zones?
    Select the zone where you want to pause or stop, then press the center of the dial.
  • Is it safe to place baskets on my worktop?
    The baskets get hot during cooking. Be careful when handling and place them only on heat-resistant surfaces. DO NOT place baskets on top of the device.
  • When should I use the crispier plate?
    Use a plate with a crispier crust if you want your food to be crispier. The plate lifts the food in the basket so that air can pass under and around it for even cooking.
  • Why wasn't my food cooked completely?
    Make sure the basket is fully inserted during cooking. For even browning, make sure the ingredients are placed in an even layer on the bottom of the basket and do not overlap. Shake the basket to mix the ingredients until crispy. The temperature and cooking time can be adjusted at any time during cooking. Just use the TEMPO arrows to adjust the temperature or the TIME arrows to adjust the time.
  • Why did my food burn?
    For best results, check cooking progress and remove food when desired browning level is reached. Remove food immediately after the end of the cooking time to prevent overcooking.
  • Why do some ingredients flutter when air frying?
    Fryer fan occasionally blows light food. Use wooden toothpicks to secure loose, light food, such as the top piece of bread on a sandwich.
  • Can I air-fry moist, battered ingredients?
    Yes, but use the correct breading technique. It is important to first sprinkle the products with flour, then with an egg, and then with breadcrumbs. Press the breadcrumb firmly into the batter to prevent the crumbs from being blown away by the fan.
  • Why is the display screen dark?
    The machine is in standby mode. Press the power button to turn it back on.
  • Why does it beep?
    Either the dish is ready or cooking has started in another zone.
  • Why does the message "E" appear on the display screen?
    The device is not working properly. Please contact customer service at 1-877-646-5288.
  • Why did the circuit breaker trip while using the device?
    The device consumes 1690 watts of power, so it must be plugged into a 15-amp circuit breaker. Using a socket on a 10-amp switch will cause the switch to trip. It is also important that the device is the only device connected to the outlet during use.

    What to Look for When Buying an Airfryer

    There are a number of considerations to consider when buying an air fryer. First, consider how many people you usually cook for. If you have a family of four or more, you should look for larger capacity options rather than smaller, more compact options.

    You also need to consider the space you have in your kitchen cabinets or on the side. This may make a difference to which model you choose, as it should be in your kitchen, you may not need an overly bulky option, or you may want one of the more streamlined designs.

    Basket fryers and bowl fryers are also available. Bowl options usually have windows so you can check your food, but they are not as healthy as basket models because the food stays in contact with the cooking juices. On the other hand, basket fryers remove juices from food, but you usually need to open them to check your food, which can let in cold air and slow down cooking times.

    What can be cooked in an Airfryer?

    There are a number of foods that can be cooked in the fryer. The obvious options are the foods you normally deep-fry, such as chips, chicken wings, and fried potatoes, but there are plenty of other foods you can cook as well.

    Many fryer models come with an app that offers inspirational recipes so you can get the most out of your kitchen gadget, but you can also cook most dishes that you would cook in a traditional fan oven as they use the same principle.
