The best way to defrost a turkey is to plan ahead. You will need to plan for 1 pound of turkey per person you are serving. So, buy your turkey accordingly and then follow that timeline. I can tell you that it took 5 full days in my fridge to thaw a 20lb turkey.
- 4-12 lb turkey: 2-3 days
- 12-16 lb turkey: 3-4 days
- £16-20 from Turkey: 4-5 days
- £20-25 from Turkey: 5-6 days
How long do you cook a turkey?
The general rule is to cook a turkey for 15-20 minutes per pound. This may vary depending on whether your turkey is stuffed or not, or your oven temperature, because they differ. The main thing to remember is that you will need a meat thermometer on hand and you can find one at any grocery store. DO NOT trust a thermometer that "appears" on a turkey and has been added by the manufacturer. To test my recipe, I made a 20lb turkey and it took exactly 4 hours in my oven. The first secret of a super raw and juicy turkey is BUTTERFLY! We used two and a half sticks of butter for this recipe (based on a 14-22 lb. turkey). The oil is full of herbs stuffed under the skin of the bird and is also rubbed all over. It keeps everything incredibly tasty too. The next step is slow cooking at 325 degrees, if you cook the turkey too fast it will be dry. Also cover with aluminum foil! This helps keep the turkey moist and prevents the skin from quickly cooking and drying out. Another important trick is to let the turkey reach room temperature! An hour before cooking, you'll take the turkey out of the fridge, leave it in its wrapper, and let it sit for an hour (yes, it's perfectly safe). nine0003
How to Make a Roast Turkey:
I've included two sets of process shots here below each set of numbered steps so you can get a visual picture and follow along. Before I start, I always take my turkey out of the package, and all the vegetable oil and ingredients to put in the cavity, it makes everything go well and fast.
- First things first, make your own herbal oil. You want your butter to be very smooth. It's even good to even microwave it for softening until it melts completely. Add a mixture of garlic, salt, pepper, lemon juice, thyme, rosemary and sage to the oil. I like to use fresh herbs, but dried ones are good too. nine0152
- You need to make sure it is mixed very well so that the herbs are evenly distributed. You can use a spatula, a fork, or sometimes I find it easier to mix it with my hands.
- Now place your turkey on the large baking sheet. This will help collect juices that are running low. Dry it! Pat it completely dry and hollow with paper towels. We remove excess moisture because we want to burn the skin, if it does not dry out it will basically smoke turkey and the skin will be raw. nine0152
- Season the turkey generously with salt and pepper! Yes, we will be using herbal oil, but go ahead and season the inside and outside of the turkey well. We do this for an extra layer of seasoning because turkey doesn't have much flavor.
Roast Turkey Continuation:
- Now carefully use your fingers to lift the turkey skin off the breast meat. I start with one hand, and then when the skin loosens, I can put both hands in there to continue to fully extend. Be careful and patient not to tear the skin. As long as your turkey is thawing properly, it's a very simple and fairly quick process! nine0152
- Fill with herbal oil! It will use about 1/3 of the cavity mix, so save it. Then use half of the mixture under the skin, lifting the skin and filling in small handfuls.
- Once the oil is under the skin, massage the oil under the skin with your hands to make it as even as possible.
- Now rub the remaining oil (in addition to the one reserved for the cavity) all over the turkey, chest, wings and legs. Rub the cut oil into the cavity and season with chopped lemon, garlic heads, quarter onions and herbs. It seasons the inside of the turkey, so don't miss it! nine0152

It's also good to plan here. Once the turkey is out of the oven, cover it with aluminum foil and let it cool for 20-30 minutes before cutting it open. This is a good time to make a sauce or toss any last-minute dish into the oven. If you cut your turkey right away, your turkey will be incredibly dry because all the juices will spill out. Additional Roast Turkey Cooking Tips:
- The amount of oil and herbs here is for a fairly large turkey (14-22 lbs), if your turkey is much smaller then you can cut the herb oil and herbs and seasonings inside the turkey in half.
- DO NOT add liquids such as water or stock to the bottom of a roasting pan under the rack. This will "steam" your turkey. The turkey will create its delicious juices at the bottom of the pan.
- There really is no need to spray your turkey. We've added enough flavor inside and out so you don't have to do it at all. If you absolutely want it, you can keep in mind that when you open the oven door, it loses heat and your turkey may take longer to reach temperature.
- Always release the carp / cover the turkey with aluminum foil before going into the oven. Now that there are about 20-30 minutes left, you can remove the foil if you feel your turkey is not getting enough skin color. nine0152
- You don't have to tie the legs of the turkey together. I never do and I find everything cooks more evenly when I don't. Some people love doing this because it looks eye-catching and you can do this with kitchen yarn if you like.

- 5 garlic cloves, minced
