Authentic Pizza Ovens is your connection to time-honored traditional cooking. We import the finest quality, artisan-made ovens, each hand-crafted in a village near Rio Maior just north of Lisbon, Portugal.

Nothing brings a family and friends closer together than family-style cooking– from kneading the dough, preparing the toppings, to ultimately creating piping hot, wood fired, one-of-a-kind pizzas to enjoy as a group!

The flavors of naturally cooked wood fired pizza are unmistakable and the crispy base (created by setting fire directly on the cooking surface) is a hallmark of our ovens. The quality and freshness of expensive restaurant pizza can be yours at a fraction of the price, and a wood fired pizza is an investment which adds value well beyond the fun and memories you serve up!

Our ovens are hand made from quality natural materials to ensure the finest, most authentic product. We use refractory (fire) brick, a ceramic material in the oven lining. It is able to withstand high temperatures and outdoor use, however we recommend that you use one of our covers when not in use or to avoid severe weather exposure. A cover will not only protect it from general dust but primarily from wet weather. It is important that your oven isn't sitting in wet damp weather or with snow on it. Covers will protect the longevity of your oven. See our Accessories Page for options.

Just as with the authentic ovens of Europe, it is highly recommended that you “break it in” by making a small fire (low heat) to dry out any moisture in the oven. This process of curing your oven should be repeated every day for 5 days. Our ovens come with thermometers that are in Celsius. While they are good thermometers, if you want extreme accuracy we suggest you buy an infrared thermometer.  A visual inspection of your oven will provide you with the best clue as to its readiness, as the brick surfaces transition from black to white as the charcoal is burned off the oven walls.

Despite your best efforts in curing your oven cracks will appear. This is completely normal in all terra-cotta, and brick wood fire pizza ovens. We include our special repair kit with all our traditional brick ovens to fill any cracks. Cracks may appear around the dome or along the seam between the brick and mortar and even inside. They will expand when the oven is hot and retract when it cools. Most European pizza oven owners do not patch their ovens as it is a sign of a seasoned oven and because they are only superficial cracks, they have no reason to. As previously mentioned, the ovens will crack but to avoid quicker and/or larger ones it is important you cure your oven properly. See FAQ’s for proper curing treatment.

It is also common for the base of the oven to crumble a little bit.  The base is concrete and it is NOT pre-fabricated materials- it is all handmade so it may crumble a little bit on the edges.  You can easily paint the spots with the Ultra Fire crack repair or even use some mortar.   You may find gaps inside your oven in the dome as well as on the floor of the oven- this is normal and intended. Remember, these are handmade!

    Cooking in the Pizzaioli

    This outdoor wood burning pizza oven cooks up to two 12" pizza pies in 90 seconds! 

    But, even more than incredible pizza, this authentic oven will have you cooking up amazing wood fired meals in your own backyard.

    The patented design for the Pizzaioli traditional oven combines 100% clay, refractory cement, and ROCKWOOL insulation to hold heat for up hours.

    You can heat it up in 45 minutes to 1 hour giving you enough time to drink a glass of wine while you prepare your food.  Then, the Pizzaioli will hold the heat for many hours.

    This heat retention will allow you to use hight and low temperature wood-fired cooking for many meats, including turkeys, chickens, roasts, bread and desserts.

    The lower dome of this outdoor pizza oven assures more direct heat reflection to the oven floor and the wider mouth of the Pizzaioli makes it ideal for your larger pizzas.

    The Pizzaioli uses approx. 5-6 lbs of wood per hour depending upon moisture and wood type. Aromatic hardwoods are recommended (pecan, walnut, apple, mesquite).

    The best wood will burn hot for a much longer timeframe that bad wood.

    All Authentic Pizza Ovens brick ovens are made with steel eyelets in each corner for hoisting into place. These can be easily cut off after it's put into position.

    • Would I be able to contro the temperature well enough to bake bread without burning it? How does the delivery work. Do you take the oven around the house to the backyard and set it up? What kind od access do you need? Thanks

      Yes, the Pizzaioli brick oven holds heat very well so once you reach the desired temperature, you can bake bread to perfection.  It does take some practice and experimentation when first starting out but we have many customers who bake bread in their oven.  The best way to determine the temperature is with an infrared thermometer.

      Regarding shipping, the oven will be delivered in a crate via Freight delivery with curbside lift-gate service. That means the delivery driver will take the oven off the truck and put it in your driveway.  They won't be able to move it to your backyard.  Most customers use either an engine hoist or have a contractor use a forklift to move the oven to its base.  You can read even more about our shipping policies here.  Let us know if we can assist further!

    • What's the floor size of the brick ovens from Authentic Pizza Ovens?

      There is 5" from the bottom of the oven to the floor base. The base filled with Rockwood insulation is approximately 2.5" so the bricks are around 2.5" thick as well.

    • What's the heating time of stainless steel and brick ovens?

      Stainless steel pizza ovens will heat faster but they won't stay hot as long. Brick ovens take longer to completely heat but the heat will be retained in the oven for much longer cooking times.  

    • Do you sell anything to fill in the cracks on my oven?

    • What would be required to install this oven indoors.

      Every indoor pizza oven installation will be different depending on your residence structure and your geographical location so make sure that your installation complies with your local building codes. The first step when considering purchasing an indoor pizza oven is to determine if there are any certifications needed for the pizza oven. Unfortunately, none of the Authentic Pizza Ovens (the brand) are certified for indoor use, therefore they can not be installed indoors.

    • What is the weight of the Pizzaioli Brick Wood Fired Pizza Oven?

    • My question is about delivery. I'm interested in the Pizzaioli Brick Wood Fired Pizza Ove. It weighs about 1500 lbs. Is the oven dropped off at my front door and it will be up to me to get it in the back yard on the table I built. Or will the crew that delivered it move it all the way to the backyard?       When purchasing an oven from us, you get free lift-gate service included with your delivery. This means the carrier service will get the oven off the truck for you and will typically place it in a driveway or garage. It depends on the layout of your home and the driver of the carrier service on where exactly they will unload the oven. The carrier service will not place your oven on the table you built for it though. This will be up to you. In order to help you with this, we have a blog post about moving your oven to the base.     • Hello, I am interested in the Pizzaioli oven. Wondering if I can use gas and wood?. Can it come with a rotating roaster pre build Inside ? Thx

      Thank you for your interest in our products! Our Pizzaioli ovens are all wood burning only. They cannot be converted to gas and, because they are handmade, they cannot be customized to include a rotating roaster. However, our Lisboa Ovens are designed to be tall enough so that a Spit/Rotisserie can be used with them.

    • Where is your choice of colors for the ovens. Do you have examples to look at?

      The Pizzaioli Brick Pizza Oven comes with the traditional white dome, a stone covered dome, or a brick covered dome.  For the traditional white dome, you can paint or tile the dome to the color of your choice.     • My oven has lots of cracks from curing it. When using the repair kit I understand it needs to be Hot. Do I repair it when the fire burns out or do I do so with a fire lit? Also when cooking a pizza what temperature do I need to get the oven to? Thank you!

    • Does the oven come with a pre drilled whole for a thermostat? Also if i purchase your cover , is it a heavy duty cover because the winds where i live are very strong and always ripping up every cover i buy? What carrier do you use for the shipping and would they be able to drop off in my backyard rather then leaving it up front until I get my contractor to set it up for me?

      Yes, the Pizzaioli Brick Oven comes with a thermometer and there is a hole pre-drilled for that thermometer.  The custom cover that is made for these ovens are nylon.  Our customers that use the cover in all areas of the US tell us they work fine but you may need something super think if all of your other covers are tearing.    These brick ovens must ship via Freight so we use multiple freight carriers (ie, SAIA, RoadRunner, Estes) depending on where the oven is shipped.  We pay for shipping and curbside lift-gate service which means the delivery driver will take the oven off the truck and put it in your driveway (or close).  The delivery drivers do not have any method for moving the oven to your backyard so you'd need to work with your contractor to move the oven to the backyard and on its base.  The freight company will call you before delivering so you can schedule for a time when your contractor is available.  Let us know if you need any additional information!

    • How does this come shipped and what is the weight on this oven

      The Pizzaioli Brick Oven weighs around 1,200 lbs. The oven is shipped packed in a crate on a pallet so most customers use one of the following methods:

      1.  Move the entire crate using a forklift and then once opened, move the oven into place with either the forklift or engine hoist.  
      2.  Open the crate and move the oven with an engine hoist (attaching chains to the 4 eyelets on the corners of the oven).  
      3.  Open the crate and move the oven with a crane (attaching chains to the 4 eyelets on the corners of the oven) - believe it or not, in some areas you can get this done for under $200. 

      As we don't know the local contractors in your area, I'd recommend either asking the contractor doing your backyard work if they can provide one of the options mentioned above or checking on Angie's List to find a reliable local contractor.

    • What tools do I need for my wood fire pizza oven?

      You will need a Pizza Peel to put your pizza pie in the oven, turn the pizza while in the oven, and pull out your scrumptious pizza when it's done. Next, we recommend a good Infrared Thermometer to measure the heat in your oven when cooking. An oven Brush for brushing away the ashes, and an Ash Shovel to remove the ash after cooking.

    • Will there be problems with Pizzaioli oven in winter?

      We have customers that have this oven in snow without any issues. We recommend using a cover when not in use.

    Introducing a wood fired pizza oven

    I currently make ovens with a base diameter of 75 centimeters - this is the most optimal size. In it you can bake two pizzas with a diameter of up to 30 centimeters at once, or put two or three pans with your lunch or dinner.

    The oven heats up quickly, just 30 minutes and one handful of firewood are enough to start baking and cooking.

    The oven is made according to the classic proportions of the Pompeian oven from modern materials: fire-resistant concrete reinforced with steel mesh filled with expanded volcanic glass, and basalt insulation. Ovens do not require additional thermal insulation during operation, even in winter: the lowest temperature at which I baked pizza in my oven -17 ° C!     • Materials

      The lightweight expanded volcanic glass I use has the same performance as fireclay bricks, while the durable Portland cement and steel reinforcement create a strong frame stove that heats up quickly and keeps heat for a long time. The oven is insulated with basalt fiber and keeps heat for a very long time, you can simmer meat in it or bake bread, additional insulation is not required.

      The classic design of the Pompeian stove and its white color make it fit into any interior of a country patio or gazebo. You can decorate the stove yourself with thermal plaster, tiles or paint it in any color that suits you with heat-resistant enamel, or entrust it to me.

    Dear compatriots, isn't it time for us to entertain our guests at the dachas not only with kebabs and steaks, but also with pizza, fresh bread, meat baked in pots, fragrant porridge?

    To cook all this delicious food, you will need an outdoor pizza oven. In Rus', this stove is well known: it is essentially an ordinary Russian stove, only smaller and without sand filling and with a simplified form of the furnace. Well, the size of the pizza oven, of course, is smaller than that of the Russian oven. Although both ovens are close relatives and descended from a single ancestor - a Roman or Byzantine oven for baking bread.
    Air to maintain combustion in the crucible of the Russian oven is supplied from below through the furnace at the mouth, and air enters the pizza oven through the mouth (door) or through the air ducts in the back of the crucible.
    The pizza oven can be made with a hemispherical crucible (this version of the pizza oven is more difficult to lay) and with a semi-cylindrical crucible. The second option is simpler, as it allows you to use the formwork in a circle (semicircle or semi-ellipse), which burns out during the first heating of the pizza oven. When firing a pizza oven, coals are shifted either to the end of the crucible with a semi-cylindrical shape, or to one of the sectors from the edge with a hemispherical shape of the crucible of a pizza oven. For a pizza oven (Russian oven) without a hearth and a grate, the use of upper combustion is typical: large firewood is stacked from below, and kindling is stacked on top: thus, air is supplied to the combustion zone - firewood acts as a temporary podium for a fire inside the crucible of a pizza oven . It is easier to fire up a top burning pizza oven than a bottom burning pizza oven. When the pile of firewood collapses, the fire in such a stove does not go out.

    Consider what a pizza oven looks like:

    Greek pizza oven in a restaurant on the island of Rhodes. The picture shows how the cook raked coals into one of the edges of the stove. Pizza is baked in the charcoal-free space of the oven floor.

    In fact, this Greek pizza oven is nothing more than a Russian oven without external filling. A hemispherical pizza oven can be made without a layer of insulation over the masonry of the crucible, or with additional insulation. As a heater, dense basalt wool can be used (there is a risk of dampness), vermiculite with cement, aerated concrete crumb.

    An excellent example of a successful layout of the outdoor cooking area in one of the houses on the island of Rhodes. On the left is a pizza oven, on the right is a large brick barbecue, with the possibility of cooking meat on a spit.

    Pizza oven side view. The higher the pizza oven pipe, the better the draft. However, it is also important not to overdo it with draft - otherwise the firewood consumption will be very large, and the coals will burn out quickly.

    Brick brazier with a back wall has a number of advantages compared to a brazier open from all sides: in addition to the fact that the hearth is protected from the wind, red-hot bricks make a significant contribution in the form of strong infrared radiation, which contributes to better roasting of the cooked meat.

    When setting up an outdoor cooking nook, don't forget the sink and water drain.
