How we test hand mixers
During our most recent test in the Good Housekeeping Institute Kitchen Appliances & Innovation Lab, we assessed the variety of speeds, the ease of attaching the beaters, the comfort level when holding the hand mixer and how easy it was the use the controls and clean the mixer. We tested 22 hand mixers in the Lab and at home by mixing oatmeal cookie dough, beating yellow cake mix, kneading white bread dough and whipping egg whites and heavy cream.
We also consulted online reviews to see which hand mixers consumers love, in addition to which ones they have difficulty with. When making our picks, we also considered how intuitive each model was to use, as well as ergonomics and any useful features and included attachments.
What to look for when shopping for a hand mixer
✔️Comfort: Since you’ll be holding up the hand mixer for an extended period of time, a heavy mixer can tire your arm out quickly. Look for lighter mixers with a comfortable grip. We suggest shopping in person and lifting and holding the hand mixers on display, if possible.
✔️Accessories: All hand mixers come with detachable beaters, but only some models include other attachments, such as whisks or dough hooks. Although additional attachments do usually increase the price of the model, they give your hand mixer more uses.
✔️Cord vs. cordless: If you’re short on outlets in your kitchen, or if they’re in inconvenient locations, you may want to consider a cordless hand mixer. You do have to remember to charge them regularly, but they allow for ease of use by both right- and left-handed people. If you’d rather not leave your hand mixer on a charger, you can look for a model with a swivel cord so it stays out of the way.
✔️Storage: Extra accessories are nice to have, but they can get lost in drawers easily. Then, before you know it, you only have one beater hanging around. Look for models with storage options, like a bag, to keep all of the pieces together. If you’re looking to save space, some models have snap-on storage cases to house the accessories with the mixer so they’re all in the same place when you need them.

If you’re looking for a mixer that does more than just mix, the KitchenAid has a few extras that make it a little handier than the average mixer. It has nine speeds from a super-slow speed for stirring in ingredients all the way up to a high speed for whipping cream or making a fluffy meringue. Our tester reported that it "completed every mixing task we put it to," but noted that "it did shake, and the noise level increased when the mixer was at higher speeds," but even so, it was quieter than some of the other mixers we tested.
The soft-start means that even if you choose a high speed, the mixer will start slow and build up, so you won’t fling ingredients out of the bowl. The cord locks into place on the left or right side of the mixer to keep it out of the way, no matter which which hand you use or where your outlets are.
This hand mixer includes two turbo beaters, a stainless steel whisk, two stainless steel dough hooks, and a blending rod so you can use it like an immersion blender. This Cuisinart hand mixer includes the features you need, plus some extras—and a clip-on case to hold everything for storage. The powerful motor operates with a simple on/off switch and a one-touch speed control lets you select one of the nine speeds.
It comes with two beaters, one whisk, two dough hooks, and a spatula that all store in a clip-on case that you can also tuck the cord into. Rather than a button to release the beaters, this has a latch, so you’re less likely to accidentally release the beaters.
Our tester found the Cuisinart tackled all the tasks thrown its way: chocolate chip cookie dough, rice pudding, and bread dough. However, she warned it's louder than other models. While the Cuisinart 9-speed hand mixer might be slightly less attractive than the KitchenAid hand mixers, it performed comparably during our tests and costs slightly less.

Appliances are getting smarter, like this hand mixer that detects the attachment and adjusts the speed to the best range for that particular style of mixing. It offers higher torque at lower speeds and nine speeds so you can start slow and work your way up. Our tester loved the double-whisk design, which she said made it "incredibly easy to whip eggs."
The scraper beaters are coated so you can beat right against the side of the bowl with less noise. There’s a count-up timer so you can keep track of the mixing time for recipes that require a specific mixing length.
A mixing light makes it easier to see what’s in the bowl, and a power boost button lets you momentarily increase the speed to get past a lump in the batter, then resume mixing at normal speed. A pause button lets you stop mixing momentarily so you can add ingredients.
This comes with two scraper beaters, two dough hooks for denser doughs, and two balloon whisks for whipping cream or making other light, fluffy mixtures. While our tester found all of the features of this mixer to be nearly perfect, they did note that the mixer is one of the heaviest options. At four pounds, the mixer did get a little heavy with extended use. All the parts store in a case that clips onto the bottom of the mixer, and the cord tucks in there as well.

If you’re looking for a faster, easier way to mix cake batter, whip cream, and soft doughs, but you don’t want to spend a lot for functions you’ll never use, this mixer fills the bill. It’s got an ergonomic design and nylon helix beaters that offer two times more surface area than your typical wire beater. Our tester highly recommended it for those "on a tight budget and looking to use it occasionally."
The Black+Decker Helix mixer is lightweight, so it’s not tiring to hold and it has five speeds, so you can start slow and work your way up to a faster speed for whipping or beating. The power boost button increases the power until you release it, so you can power through lumps and then continue mixing at the original speed. The beaters are dishwasher safe for easy cleanup. While it's not the best for egg yolks, our tester found it has "good power," particularly for the price.

This hand mixer uses something called "SmartMix" technology, which basically means the motor is aligned vertically for better weight distribution. This, plus a soft, slip-resistant handle makes for a comfortable grip.
Braun also did away with ventilation slots, so you can stop worrying about ingredients making their way inside the unit; simply wipe with a cloth to clean. What to Look for When Buying a Hand Mixer

All hand mixers come with beater attachments. Classically, the beater attachments were designed with a central post that the beaters were built around. Now, most beater styles are wire beaters without any obstructions and are typically easier to wash. Some beaters are either reinforced nylon or silicone-coated to make mixing all the way to the sides of the bowl convenient and avoid scratching the bowl in the process.
Several models also come equipped with a whisk attachment, making whipped cream a snap. Usually, there is just one whisk attachment, although the Breville Handy Mix Scraper model comes with double whisks for even faster whipping.
Many hand mixers come with dough hook attachments or offer them separately. While these are certainly an option, keep your expectations tempered when it comes to mixing doughs. A tiny batch of very soft cinnamon roll dough may be possible, but be careful not to push your machine too far. And remember, you’re going to be giving your arm a workout pushing the mixer through that dough as well.

The main impression from handling the mixer is yes, it is very heavy. In the process of long whipping - for example, a large portion of eggs with sugar - the hand has to be changed often. It is good that the device is equally convenient to use for both right-handers and left-handers, everything is thought out here. Care
The instructions do not say that the mixer attachments are not dishwasher safe. Common sense also tells us that this can and should be done. However, do not use abrasive cleaners or chemicals that are not suitable for washing dishes.
The housing should be wiped with a damp cloth and under no circumstances should it be washed.
Our measurements
When whipping in turbo mode, the average power of the mixer was 81.6 watts. When whipping butter with sugar at speed 1, the average power was about 70 watts. Beating eggs with sugar on speed 5, we reached an average power of 85.5 watts: more at the beginning, less at the end.
In general, when whipping or kneading the dishes allowed by the instructions, we did not even come close to the power threshold declared by the manufacturer. It seems that this mixer still knows how to knead dumpling dough, just for safety reasons, we are not recommended to do this. nine0003
To measure the noise level of the device, we placed it a meter away from the sound level meter, pointing the microphone at it, and turned on the mixer at maximum speed in Turbo mode. The noise level of the device we measured was 75.5 dBA, which is quite a lot for a manual kitchen appliance.

Beating egg white
We took one cold egg white and beat it in turbo mode. In 1 minute and 42 seconds, we got a lush, persistent foam. The average power of the device in this case was 81.6 watts. nine0003
We did not come up with recipes that included whipped protein without sugar, so we added 50 grams of powdered sugar, beat again and deposited on a baking sheet from the bag.
Meringues - and we got them - were baked (or rather, dried) for two hours at a temperature of 100 ° C.

The resulting mixture was poured into a non-stick saucepan and heated until thick, stirring constantly. The process is lengthy, and we tried to mechanize it - to stir with the help of dough kneading nozzles. But this did not make it easier, because, we will not get tired of repeating, the mixer is too heavy. So it's easier to mix with a spatula.
Then we left the mixture thickened to the state of liquid sour cream to cool, but for now we whipped cream with a 35% fat content. The total energy consumption for whipping and kneading was 0.009 kWh. Thus, using the example of a rather long, multi-stage test, we finally became convinced that measuring the power consumption in the case of a mixer is absolutely pointless from a practical point of view. nine0003
After complete kneading, we added raisins and baking powder to the dough, quickly stirred with a mixer for 15 seconds and put it in a greased mold. Baked at 140°C for 1 hour and 15 minutes.
Result: excellent.
Custard
In order to still check whether it is convenient to use the mixer when preparing heated dishes, we decided to prepare custard according to the classic recipe.
Beat 150 grams of sugar, two eggs and 50 grams of flour (plus a pinch of salt and vanillin on the tip of a knife) into a strong foam using beaters. Then half a liter of milk was added and whisked further - until the sugar was completely dissolved. nine0003
The resulting mixture was poured into a non-stick saucepan and put on the smallest fire. The mixture should be stirred all the time, so we changed the whisks to the whisk attachments and turned on the mixer on the first speed.
Everything went well for the first five minutes, but then both hands of the cook got tired from the weight of the appliance. I had to mix with a spatula.
