How To Cook Rice in a Rice Cooker

Once you learn how to cook rice in a rice cooker, it will be dead simple to repeat for consistent, fluffy and delicious rice every time. Hands off too! Simply rinse the rice, use a 1:1 ratio of water to rice, start the machine and you’re good to go. For more details about the reasons ‘why’, read on!

I first learned to cook rice from my maternal grandmother many years ago. She’d have me go into the garage and take a few scoops out of those vertical rice bins that look like water coolers–y’all growing up in Asian households know what I’m talking about.

Any meal without rice in that house was just NOT a complete meal, so you can bet everyone living there got a lot of practice making rice, and that I am now particular about how my rice is cooked!

Why use a rice cooker?

Using a rice cooker is an almost fool-proof method of cooking rice at home. It’s a convenient (and consistent) way of achieving those perfect fluffy and sticky grains that completes any meal. Yes, you can cook rice on the stovetop–but why add the extra hassle of watching rice cook, when you can just set it and forget it? It’s important to remember, you can even use a rice cooker to make quinoa too!

I use a relatively inexpensive rice cooker that was given by my mom but has used even cheaper (~$15 range) and super pricy ones at my family’s and friends’ houses. If you prefer not to buy a uni-tasker like a rice cooker, you can easily cook your rice in a microwave, on the stove, cook jasmine rice in an Instant Pot, Instant Pot basmati rice, or cook short-grain rice in an Instant Pot too.

But if you eat rice just about every day, a dedicated rice cooker with a simple interface and keep warm function should deserve some consideration. If you have an Aroma rice cooker, you should check out my Aroma Rice Cooker Instructions post.

Choose a type of rice

First things first, you need to choose the type of rice you want to eat. While there are plenty of different types of varieties of rice, there are 3 main sizes of rice grains and the type you choose can greatly affect the proportion of water you need to use:

At home, and for this recipe, we like to cook with medium grain sushi rice for its pleasant, slight stickiness and moisture.

Rinsing the rice

Lightly rinse, swirl, then drain the water from the rice 1 to 2 times with cold water to get rid of extra starch build up from broken grains or other debris. You want to retain some of the starch so there’s a bit of stickiness, good for being able to pick up your rice with chopsticks.

You can wash the rice in the rice cooker pot directly and use your hand to move the rice grains around. Pour out the cloudy water from the pot and repeat once or twice if necessary–you don’t want or need the water to be completely clear.

It’s important to note that some white rice produced in the US is enriched with powdered nutrients (iron, folic acid, etc. ), and washing your rice could potentially remove these added nutrients.

Adding the proper water to rice ratio

Measuring cup method (preferred!)

If you care about consistency, accuracy, or being able to tweak this ratio for other kinds of rice, you should be using a measuring cup. Please note, I use the same measuring cup for BOTH rice and water in order for the ratios below to work.

For any type of grain size (short, medium, or long) you can follow a 1:1 ratio of water to rice. If you want to add more rice, you can adjust the recipe in a similar way, 2 cups of rice to 2 cups of water. This should produce fluffy, but slightly sticky grains of rice when cooked, and works well for up to 3 cups in our rice cooker.

This ratio gives me perfectly fluffy rice every time. You may need to tweak them a tiny bit to your taste and specific brands of rice, and possibly even your rice cooker (see adjusting section below).

Note that these ratios are different than when cooking rice on a stovetop or cooking white rice in the microwave. This recipe also differs from cooking brown rice in the microwave and brown rice in a rice cooker.

The knuckle measuring method

If you’ve made rice in an Asian household, you should know full well that the standard method of measuring an appropriate amount of water only requires the use of (anyone’s) first knuckle of your index finger.

The knuckle method can work, but my problem with it is that it’s not precise enough for repeatable results. If you use this method and your results come out different everytime, don’t come wagging your finger at me.

To clarify, this is how one would do the knuckle meausring method: rinse and drain your rice, then shake it a bit so the rice is completely level in the pot. Put your index finger straight down into the rice so that only the tip barely touches the top surface of the rice. Then add water so the water level reaches your first knuckle, approximately 1″. I’m not even going to post a picture of how to do it because I don’t want you using this method.

While I grew up with this rule and it works well enough, I don’t use it anymore. I can’t in good conscience rely on this or much less teach people to use this less than scientific method since it has many variables: how level you get the rice, the length of whomever’s finger doing the measuring, cooking vessel size, etc.

If you’re trying to tweak a recipe for different kinds or volumes of rice, the variations and pseudo finger-length method measurements get out of hand, quickly.

Powering it on

After filling your rice cooker pot with rice and water, place it back into the cooker and turn it on. Some rice cookers only have one power switch, and no options, so you’re all set. For fancier ones, it may have normal or quick cook settings, so read your manuals to make sure you know what it’s doing. The cooking typically takes from 20-30 minutes.

Once you press start, DO NOT open the lid! You don’t want to lose that precious water/steam essence you’ve got going on. Trust your machine and it’ll do the work for you. Most modern rice cookers will make a little sound or have an indicator light to let you know when it’s done. Our cooker has a “keep warm” setting after the rice is done cooking.

Let it rest, then fluff

Let the rice sit in the cooker for about 5-10 minutes after the machine tells you it’s done. If you’re in a hurry you can eat it now, but waiting lets the moisture evaporate a bit, and along with the heat, distribute evenly through the grains.

Then open the lid, use a rice paddle to fluff it up a bit before serving. This is a Mickey rice paddle a friend got for us, but any other type will do too :). To learn how to properly eat rice with chopsticks, you can read my chopstick tutorial.

Adjusting your rice to water ratio for other rice types

Depending on the type of rice you’re using and the volume you want to cook, you may need to adjust your ratios. Longer grain rice will typically need more water, while shorter grain rice will need less.

I like to test any new type of rice I’m cooking with a 1:1 ratio, then adjust more or less water depending on the results. Once you’re within ballpark range, try adjusting the water by ¼ cup measurements and see how this changes your rice texture.

If you find that your rice is too dry and a little hard, you can add more water and leave the rice on warm for 5-10 minutes.

If your rice is too mushy, well that sucks because you’ll need to start over and decrease the amount of water. If you HATE wasting food (hello paternal grandmother with dozens of bite-sized portion leftovers in the fridge), additional options for saving the rice could be turning it into fried rice with Chinese sausages, Spam musubi, or rice pudding for dessert (extra yum!).

Best Rice Cookers (2022), Tested & Reviewed

For the full-size rice cookers, we cooked two uncooked cups of Nishiki Japanese medium-grain white rice in each model; in those that performed well, we then cooked two cups of short-grain brown rice, followed by two cups of long-grain basmati rice. For the mini rice cookers, we cooked one uncooked cup of the medium-grain white rice in each model.


What we looked for

Is the rice cooker easy to use?

The best rice cookers should make cooking rice nearly effortless and require very little human intervention. All the models we tested delivered on that intuitive simplicity with manuals that clearly outlined how to get started, including details on how to measure and wash rice, how much water to add to the cooking pot, which menu setting to use, and what buttons to push to start cooking. In machines that claim they can keep rice warm, we expected the Keep Warm setting to click on soon after the rice was done cooking.

How long does it take to cook rice?

Range in cooking times varied greatly among the machines. Though quick-cooking rice is always a temptation, we found that the best rice generally took the longest to make. The full-size Zojirushi models each took close to an hour for medium- and long-grain white rice and nearly an hour and a half for brown rice. By contrast, the Instant Pot and Breville Risotto Plus, which both performed so-so, took around 10 minutes.

What is the end result like?

We wanted to find a great rice cooker that excelled at all three types of rice we tested. We looked for evenly cooked, flavorful, fluffy rice. We also wanted flavorful grains that were cooked through without being gummy and retained bite without being too firm.

Does the rice cooker have any useful additional features?

Every rice cooker comes with a couple of key accessories: a measuring cup (don’t get confused, “1 cup” in rice cooker parlance is actually a ¾-cup measure) and a rice paddle. All but the Cuckoo and the Breville had a paddle holder on the rice cooker itself—a welcome feature. A few of the rice cookers that we tested included steamer baskets, which, in the case of the Hamilton Beach model, doubled as a sieve for cleaning rice. Technical features, such as the warmer or timer, make an already convenient machine even more user-friendly.

How easy is it to clean?

All of the rice cookers we tested, with the exception of the Instant Pot, have inner pots with a nonstick coating; this coating is essential for easy cleaning. You should be able to use your spatula or paddle to scoop out rice without leaving residue or stubborn rice bits stuck on the bottom. The lids of the Zojirushi, Instant Pot, and Breville machines are also washable, an added bonus, especially for those who think simply wiping down the lid doesn’t cut it. Keep in mind that almost no rice cooker is dishwasher-safe

How much room does it take up?

Each machine’s countertop footprint varied—most of the models we tested measured in at under a foot diameter, which meant they didn’t take up much more room than a food processor. Taking up less counter space is always better from a storage perspective, but the quality of the rice was more important to us in the long run.

Is the rice cooker a good value?

The machine prices varied wildly, starting at $25 and going all the way up to $260. Ultimately, the best rice cooker won regardless of price, though models like the Cuckoo and Zojirushi 3-Cup got points for performing well beyond what their price point would indicate. Conversely, a machine like the Breville was somewhat underwhelming given its $129 cost.


Other rice cookers we tested

None of the machines we tested were an all-out fail; with any of these, you will be able, at the very least, to cook some rice. That said, there were pros and cons with each machine that ultimately factored into our final rankings.

How best to use my device
How much water should be added to rice?

For 1 cup of rice (2 small servings or 1 large serving), use 1 measuring cup of rice and 1.5 measuring cups of water. When cooking some types of rice in one cup, a small amount of rice may stick to the bottom.

Why is rice undercooked or overcooked?

Due to the use of too little or too much water compared to the amount of rice being cooked. Please follow the directions for adding ingredients. So that all rice is equally well cooked, evenly distribute it inside the container.

Can I cook different types of rice in the rice cooker?

Follow the cooking tips in the instructions. Cooking time and amount of water vary depending on the variety of rice.

Should vegetables and seafood be precooked before adding to rice?

Vegetables and seafood do not need to be pre-cooked before being added to rice as they are steamed at the same time.

Can other foods be steamed in the basket at the same time as rice?

Yes. However, the steam basket should not be overloaded, as it is not too deep and there must be room for the steam to circulate freely. It should also be remembered that during cooking, juice from meat / fish may get into the rice, which gives the rice an appropriate flavor. Heat-resistant baking paper can be used to cook meat and fish in a double boiler. The appliance is perfect for cooking vegetables.

Can I add salt/seasoning to rice before cooking?

Yes. To improve the taste, salt and spices can be added to the water.

Is it possible to wash the non-stick pan in the dishwasher?

Yes, the bowl is dishwasher safe. Be careful not to damage the inner lining when loading into the dishwasher basket. After repeated washing in the dishwasher, it is recommended to grease the inner surface of the container with a small amount of vegetable oil.

Why does food leak from under the lid?

Make sure that the level does not exceed the “10 cups” mark on the inside of the container, exceeding this level may cause overflow during cooking.

Why does steam come out during use?

This may be due to a loose cap, improper installation of the pressure control valve, or a damaged seal. Turn off the rice cooker, remove the plug from the socket and check all elements.

Why does water flow onto the worktop?

Empty the condensate trap after each use and check that it is installed correctly.

Why is the heating element not heating up?

This may be caused by incorrect container placement.

Why does rice stick to the removable non-stick pan?

This may be caused by not enough water/rice in the container. Rinse the rice thoroughly and soak it for about 20 minutes.

What to do in case of a device malfunction?

After reading the instructions for starting up the instrument in the user manual, verify that the electrical outlet is in working order by connecting another device to it. If the device does not work, do not attempt to disassemble or repair it. Take the instrument to an authorized service center.

What should I do if the instrument's power cable is damaged?

Do not use the device. To avoid danger, have the cable replaced at a service center.

Why did the container change color?

The surface color of the container may change after the first or after prolonged use. The container changes color under the influence of steam and water, this does not affect the operation of the rice cooker. The device can continue to be used without harm to health.

How can this instrument be disposed of at the end of its useful life?

Cooking White Rice

* Note: Rice should not be left in the rice cooker for more than 12 hours.
Use the supplied cup to add rice (min. 0.5 cup - max. 1.5 cup) to the mini rice cooker. After cooking, the amount of rice will double.

To reduce starch, rinse rice and drain 3-4 times or until water runs clear.

* Note: when cooking the maximum capacity (1.5 cups), make sure that the water level for rice and water does not exceed 1.5 cups.
Use the waterline as a guide for adding water correctly (for example, for 0.5 cups of rice, add water to 0.5 cups of the waterline).

When the cooking cycle is completed, the indicator light will switch from COOKING to HEAT.

Cleaning instructions

Chocolate pumpkin cake

Ingredients:
½ cup of pancakes
½ cup of water
¼ cup spray

  2. Add pumpkin puree and chocolate chips.

How to cook

  1. In a small bowl, combine chicken and green chili.
  2. Pour 2-3 tablespoons of salsa into the inner pot.
  3. Top the tortilla and top with a few tablespoons of salsa, chicken, beans and grated cheese.
  4. Place another tortilla on top and repeat the layers.
  5. After the last tortilla, top with salsa, remaining cheese, chopped olives and green onions.
  6. Close the lid and turn the switch to the COOK position.
  7. When cooking is finished, leave for five minutes in HEAT and then remove.
  8. Garnish with salsa, olives, onions, avocado slices and cilantro.
Macarone in a pot

Ingredients:
1 Macaron
cup (macarons to the elbow, Babochka tie or pasta with a corkscrew)
1 cup of liquid (water or chicken broth)
½ glass of sauce for paste for paste
½ cup cheese of your choice

    Ingredients:

    5. Close the lid and turn the switch to the COOK position. Cook until rice cooker is on WARM mode. If additional cooking is required, cover pressure cooker with lid and leave WARM for 5 minutes or until done.
    6. Transfer to a plate and top with avocado slices, salt, pepper and pepper if desired.
    Curry Cuscus

    Ingredients:
    ½ teaspoon of olive oil
    ¼ cup of chopped onion
    ¼ cup of red pepper cubes
    l. curry powder
    ¼ tsp Cumin

    Directions:

    1. Set the switch to the COOKING position. Add the oil to the inner pot and let it heat up for 3 minutes.
    2. Add garlic, red pepper and onion to the inner pot. Mix and cook for 5 minutes.
    3. When the onion is translucent, add the cumin, chicken broth, curry powder and couscous.
      Stir the ingredients.
    4. Close the lid and the rice cooker will switch to WARM mode when finished.
    Light creamy cheesecake

    Ingredients:
    1 Packaging (8 ounces) of cream cheese, softened
    1/3 of sugar cup
    1 egg
    ½ teaspoon of vanilla
    Eating spray

  • Creamy cheese, sugar, sugar. Beat the egg and vanilla with a mixer until smooth.
  • Spray the cooking spray evenly onto the inside of the pot.
  • Pour the cheesecake mixture into the inner pot.

  • When the rice cooker switches to WARM mode, let it cool down in a warm place for 30 minutes.
  • If additional cooking is required, you can press the switch to the COOK position again to continue cooking.
  • Cool to room temperature and refrigerate for 2-3 hours.
  • Steamed white fish on rice

    Ingredients:
    1 green onion, chopped
    Olive oil 2 tbsp
    4 tablespoon soy sauce
    1 tsp. brown sugar
    ½ tablespoon ground pepper
    ½ tablespoon Chinese cooking wine
    1 cup white rice
    1 white fish fillet (any white fish such as cod, tilapia, opa, pollock)

    Directions:

  • Wash a glass of white rice.
  • Place white rice in the rice cooker. Add water until it exceeds the 1 cup mark.
  • Close the lid and turn the switch to the COOK position. Set the time to 10 minutes.
  • Prepare the white fish fillet to fit in the inner pot.
  • When the timer expires, place the white fish in the inner pot with a little green onion.
