This is a general reference article in which I will talk about the standard drinks in Delonghi coffee machines and some of the features of their settings. Most likely, I will give a link here in response to all questions like “what is the maximum amount of coffee DeLonghi can produce” or “how much milk can be poured into a cappuccino at ECAM” or “how many grams of coffee is used at maximum strength” or “how to make a latte to DeLonghi.

Recipes are given on the example of a specific, one of the most common at the time of writing, brand model - Delonghi ECAM 350.55 (here is her review). On different coffee machines of the company, the set of programs in memory is different, but you need to understand that:

  1. If the name of the drink converges up to the letter, then 95% that the recipe is exactly that. No, not 100%, there are differences. A typical example: The flat white of ECAM 350.55 is different from the flat white of, for example, ECAM 550.55. In addition, on other series - ESAM, ETAM - the programming principle, and, accordingly, the settings fork, are somewhat different. But even within the ECAM platform, there are differences that result from the implementation of the control panel. Technically, the machines are almost the same, but the buttons and knobs on the “face” are different, and the software for them is different.
  2. In general, all these recipes, like 95% of other coffee machines, should be considered more like “memory cells” for saving your own settings. After all, nothing prevents the program called "ristretto" from keeping the dispensing volume at 40 ml, and then the output will be espresso. And I don't care what the program is called "ristretto", so you programmed this button to dispense espresso. But there are restrictions, and they are usually purely marketing, artificial, after all, absolutely arbitrary things cannot be programmed. Example: in ECAM 350.55 it is impossible to set lungo for 100 ml for "espresso", simply because the upper limit on this button is set to 80 ml by software. But you can hang up an 80 ml lungo on the “espresso” challenge.
  3. In the review of each specific model, I almost always described all the recipes available to her. So this article is a benchmark for the brand as a whole. And an addition to the reviews in that aspect, so as not to rewrite the same thing in each, such as: "espresso - from 30 to 80 ml, from 7 to 12 grams of coffee, pre-wetting is standard, 1 second."

Maximum DeLonghi. Dried and weighed a used coffee tablet on a Doppio+ recipe that uses the maximum amount of coffee per serving. We write off 1 gram for losses - the tablet still falls apart a little.

Dairy programs:

The coffee component in milk and coffee drinks is made on the basis of the espresso mode (top-end machines have a special mode based on Doppio +) with a typical volume setting for this mode of 30 - 80 ml. The milk component always depends on the milk, because it can be whipped in completely different ways. One milk will give 200 ml of the final volume for the same time of work, the other 300 ml. All figures below are my own measurements on conditionally “ideal” milk with the switch set to “maximum frothing”.

Yes, even on recipes where it is assumed that the frothing should be set lower. This is specifically so that you can at least somehow compare them.

In any case, all milk/coffee programs can be programmed to deliver maximum frothed milk up to 700 ml! As far as I know, this is the record for the most milk dispensing at one time among all domestic coffee machines. The real trump card of Delonghi coffee machines, if such volumes are relevant to someone.

Delonghi beverage volume programming feature

This recipe programming feature on Delonghi coffee machines only applies to models with electronic control (push-button or touch, not with mechanical knobs) without remote control from a smartphone.

No precise parameters such as milliliters or seconds appear anywhere. The scale on the screen in the programming mode says absolutely nothing, and each time you reprogram, you need to start the full-scale dispensing of the drink and follow the cup / measuring cup. This is a sin of many competitors, DeLonghi in this case is not particularly distinguished, for example, almost all Philips Saeco are now programmed in the same way. Look, the younger versions of Siemens EQ.6 Plus cannot even adjust the proportions of coffee / milk, only the total volume.

At the same time, DeLonghi with mechanical twists (ESAM 2200/2600/2800/3000/3200/4000/4200) have a much clearer volume setting, as for me - just set the twist to the right place, and you're done. Yes, you still need to know how the position of the knob on the panel correlates with the volume being poured, but this is understood once and for all.

In addition, new models with remote control from a smartphone (for example, Delonghi ECAM 510.55/550.xx/650.xx) allow you to adjust recipes with milliliter accuracy without natural brewing just through a mobile application, there are simple intuitive sliders.

Features of memory and strength programming on Delonghi coffee machines

The removable CRF brewing device is the same for all models of the brand. Well, that is, it has minimal differences in the drive and “hanging” depending on the platform (ESAM will not fit ECAM and vice versa), but in terms of its basic design, which affects the formation, digestion and dumping of a coffee tablet, it is the same. Its main characteristic is the volume of the chamber. The Delonghi teapot holds, according to official data, from 6 to 14 grams of dry ground coffee. It is not possible for me personally to check this data, I don’t know how to do it with an accuracy of a gram, so I suggest taking the manufacturer’s word for it. Although I have tried to weigh and approximate the result, I am sure it is true.

Delonghi coffee machines make double portions of black coffee (as a rule, it can only be ristretto, espresso and lungo) always from the same coffee tab. That is, no matter how you run any “one-click” program, the machine will brew a drink from one grind, in one strait. Usually competitors brew double portions of two grinds and, accordingly, two straits of water. This is an important difference between all Delonghi coffee machines.

Despite the declared fork of 6-14 grams of coffee per serving, in reality the upper "grams" are used only on double servings and on special modes. That is, given that you can explicitly set these grams through the strength setting (usually it is a dedicated button with a grain on the control panel), which has 5 degrees, the machine will not use the maximum 14 grams for ordinary single recipes. The real upper limit for all drinks, except for double servings and special modes, is approximately 12 grams.

It is possible to form a coffee tablet from 14 grams (keep in mind, these are still approximate figures) only by setting the highest degree of strength and running a double portion or a special mode. On the example of Delonghi ECAM 350.55, these are the recipes “2 ristretto”, “2 espresso”, “2 lungo”, “Doppio +”.

It must be understood that this imposes an additional restriction on the minimum volume in programming mode. In double doses, the machine simply multiplies by 2 the volume of water dispensed saved for the single programs. That is, you can program an espresso (or rather a double espresso program) from 14 grams of coffee for at least 40 ml, while maintaining a single portion of 20 ml before that.

In short, the main idea is this. Despite the declared maximum capacity of the brewer of 14 grams, it is realistic for most drinks, without additional tricky settings, Delonghi coffee machines use a maximum of 12 grams of ground coffee, which already practically equalizes them in this indicator with their main competitors: Philips / Saeco / Bosch (except Verocup )/Siemens EQ6 use up to 11 grams, Jura holds up to 16 grams, Siemens EQ9/Melitta/Nivona/Miele up to 14 grams.
